Super Simple Salad

When I cook at home, I love to take advantage of fresh produce and keep things healthy.  That way, when I go out to eat, I can splurge on more savory (aka: fattening) foods.  Today I’ll share one of my favorite recipes for a super simple avocado salad.  This recipe is a take on a salad from a Chinese & Spanish Restaurant (yes, that’s right) I would frequent when I lived in Brooklyn.  My version is named after my favorite server there who made the meanest Mai Tai this side of the Mississippi.

Cee Cee’s Simple Avocado Salad

2 ripe Hass avocados (or 1 large ripe Florida avocado)
2 Roma tomatoes (or one large On the Vine tomato)
A few slices of red onion
extra virgin olive oil
coarse sea salt
black pepper

Slice and dice the avocado, then chop the tomatoes and the onion.  Add to medium sized bowl.  Salt and pepper to taste, and drizzle a small amount of olive oil over top.

Mix together.  For an extra kick, add a little green Tabasco or a dash of cayenne pepper.  Serve over a bed of crisp greens or alone.  Serve and enjoy!

This recipe makes approximately 2 servings.  It pairs well with black beans and rice, corn on the cob, and a crisp beer like Peroni or Sapporo.
